Cookie Dough Bars
There are days you want cookies… but not the effort of scooping trays, waiting for batches, and doing a sink full of dishes after.
This recipe came from one of those afternoons. Craving something warm, chocolatey, and comforting, but still made with ingredients I feel good about.
So instead of making cookies, I spread the dough into a pan and baked it all at once.
The result?
Soft, chewy, oatmeal-style chocolate chip bars with crisp edges and a tender centre. Everything you want from a cookie, just simpler.
They’re naturally gluten-free, dairy-free, and refined sugar-free, but more importantly… they taste like a treat. Not a “healthy substitute.”
Because good food should still feel comforting.
Ingredients
1 ripe banana
3/4 cup nut butter
1/4 cup olive oil
1/3 cup maple syrup
2 eggs
1 tsp vanilla
1 cup almond flour
1/2 cup GF rolled oats
1/2 tsp baking soda
1/4 tsp salt
1/2–1 cup chocolate chips
Instructions
Preheat oven to 350°F.
Combine all wet ingredients in a bowl and mix until well combined.
In the same bowl, add the almond flour, oats, salt, baking soda, and chocolate chips. Mix again until just combined.
Line an 8×8 baking dish with parchment paper, then evenly spread the mixture into the prepared pan.
Bake for 25–30 minutes.
Remove from the oven and let cool in the pan for 5 minutes before transferring to a cooling rack.
